Roasted Cauliflower “Rice” Bowl

Hi friends!  I did one of those “ask me anything” things on Instagram stories the other day and I got a bunch of questions about my health, and health in general.  Unfortunately I never have enough space on Instagram because I’m such a wordy lady, but I realized I need to give ya’ll a health update and also share more of what I’ve learned over these years in my extensive research about autoimmune disease and natural healing.  So both of those things are coming soon, I promise!  In the meantime, I made you a bowl of goodness!  This is how I’ve been eating lately: lots of plants, lots of pastured meats, lots and lots of pesto and chimichurri.  So it’s delicious, even if there is a current laundry list of indulgences I’m not enjoying.  But more on that soon.

How on earth are you managing this with a toddler you ask?  Two words: MEAL PREP!  If you aren’t cooking a bunch on a weekend day for meals you can throw together during the week, I dare say you’re missing out like a one winged penguin!  Swimming in circles!!!  Roasting pans full of veggies, grilling up chicken breasts, making large batches of pesto and chimichurri- these are the things that make my world go round.  Or at the very least keep me from losing my mind, falling off the health wagon and resorting to a bag of cherries for dinner.  Most of the time anyway.  All of this is to say that a meal like this is labor intensive IF you aren’t batch cooking and eating all of the ingredients again the next day in a salad, or another yummy bowl with a few small modifications.  If you ARE batch cooking, a meal like this is thrown together right before it’s time to eat  will make you so grateful to your past self that you may want to marry her (or him).  The recipe the amounts will be for making 2-3 large bowls, but you know what I think you should do- batch that ish!

Lastly, it feels sooooo good to be back at this blogging thing and I’m sooooooo grateful for all of your support.  I’ve had many a moment of intense gratitude thinking about how even though I basically fell off the planet for a couple of years you didn’t forget about me and have welcomed me back to this space with arms that feel like a grandma’s hug.  The best possible!!  Thank you so very, very much.  xx- Sarah . {Recipe after the jump}

La Crema Virtual Vintner

Happy Monday everyone!  Today I’m partnering with La Crema to share a recipe in celebration of the launch of their new program Virtual Vintner, a choose-your-own-adventure experience that brings wine lovers together to produce a community created wine.  It’s a fun way to learn about the process of wine making and be involved in every decision that goes into producing a vintage, and I love that at the end the wine will be available for purchase!  Participants are asked to choose their favorite varietal as the starting point, so La Crema asked that I choose mine and come up with a recipe to go with it!  I chose Chardonay because I love the way it pairs with a pesto dish in the Summer (I cannot get enough pesto, ever).  Since I’m clean eating this month I replaced my regular GF pasta noodles with zucchini noodles and tossed in the freshest of Summer vegetables and herbs to make this dish.  Perfectly light and healthy fare for the hot temps we’re having, I hope you love it as much as I do!  xx- Sarah

HEARTY VEGETABLE SOUP

This is the kind of meal I throw together when I want something to warm me through on a cold winter night, that’s EASY to throw together and so, so satisfying!  The pesto elevates the flavor, but it can definitely be enjoyed without.  And served with a warm piece of sourdough, it’s just perfection!  Winter soups, I love you.  xx- Sarah

ZUCCHINI NOODLES WITH PESTO AND ROASTED TOMATOES

My obsession with zucchini noodles continues with this summer favorite!  It’s a flavor explosion featuring two of my summer staples: pesto & roasted cherry tomatoes.  YUM to the max.  There’s nothing better than enjoying a giant bowl of noodles and not feeling like you have to be rolled into bed.  Sorry spaghetti, we’ve broken up for good!  Hope you love as much as I do!  xx- Sarah  {recipe and more after the jump!}

roasted garlic/cauliflower soup with pesto

sometimes when you have a hungry-bordering-on-grumpy husband and nothing but a head of cauliflower in your fridge you’ve got to think fast.  and that’s how this happy accident entered our lives.  the beauty of it is in the simplicity.  just a handful of ingredients, super easy preparation and presto you have a hearty, warm, satisfying meal.  also, another lesson in why one should always, ALWAYS have pesto on hand or in the freezer.  and lastly: i apologize for the similar appearance of this and my last food post.  i guess we’re doing creamy white foods and pesto this week.  more color next week, i promise.  and i’ll be back later today with some links for your weekend.  have a great one!  xx- sarah  {more after the jump}
