Fig and Cheddar Grilled Cheese

Hello my friends, happy Monday!  How was your weekend?  Our was pretty magical-  hopefully you’ve been following along on my Instagram where I’m sharing all the incredible things we’re seeing!    We’re still in Tahoe- I don’t want to leave!  Saturday we hiked Rubicon trail- and since our RV is too long to be allowed in the park and we had to walk in to the trailhead, it ended up being a 17 mile hike.  I’ve never walked that far before- my legs ached and there were moments when I was so walk-weary that I thought I might rather sleep in the forest than take another step. Which made for an ENORMOUS sense of accomplishment when we made it back to our home on wheels!

All of that brings me to this meal- a fig and cheddar grilled cheese with a simple green salad. AKA the best thing I’ve eaten in weeks.  Food tastes great when eaten outdoors and even better when your legs feel like they’re going to fall off, apparently.  HA!  But seriously, if you haven’t cooked a grilled cheese on an actual grill (this was my first time) DO IT!  Do it now.  Figs are going out of season, so snap them up and make this sandwich, I promise you’ll love it.  Until tomorrow…. xx- Sarah  PS- yes that is me wrapping chocolate in roasted marshmallows with the biggest grin you’ve ever seen.  I’m quite happy here on the road, in the forest, beside campfires, and most especially when eating grilled cheese and marshmallows.  Life if good.

Arugula, Fig and Fried White Sweet Potato Salad

Our fig tree is going bonkers right now and I’ve been harvesting figs like it’s my job!  And finding different ways to eat them like it’s my full-time hobby.  That’s how this tasty salad was born!  It’s the exactly the kind of salad I’d serve to friends at a dinner party- each plate carefully crafted and beautiful.  I’d pair it with white wine,  this soup, a crusty loaf of french bread, and some mellow music playing in the background.  When we have friends over for dinner it’s my favorite thing in the world to knock their socks off with a delicious meal so I don’t mind a little extra effort than I would spend on a normal meal for Lou and I.  AND: fried white sweet potatoes, so there’s that!  Anyway, I hope you enjoy!  xx- Sarah

SALTED HONEY AND FIG CHEESECAKE

I did it, I  made another faux cheesecake that I’m so excited about!  Remember this one topped with rhubarb? SO GOOD! This time I mixed up the recipe a bit and topped it with figs, drizzled honey over the top and then generously sprinkled with Maldon salt over every square inch.  HEAVEN. There are no words for how delicious it is.  I promise, I’m not just gratuitously thumping myself on the back here.  It’s mind blowingly good!  That combo of salty and sweet, it’s just insane.  So please, even if you never make another recipe from this blog again, make this.  And share it with your friends, they’ll probably gift you something in thanks.
