pineapple salsa

this light and refreshing summer salsa has been quite the popular treat in our house lately. it’s simple to prepare and adds a huge amount of flavor to a meal. plus it satisfies my sweet tooth!  is this even a recipe if the instructions are to just combine ingredients and eat?  not sure about that one, but i hope you enjoy!  

the what:

2 cups of fresh chopped pineapple (small pieces!)

3 tablespoons chopped fresh cilantro

1 jalapeno pepper, de-seeded and finely chopped (add more for a spicier salsa)

2 pinches of sea salt (more to taste)

the how:

mix all ingredients, chill for 1 hour,  and serve!  

*be careful when preparing anything with jalapenos, even though they aren’t the hottest pepper it will burn like mad if you get it in your eyes!  thoroughly clean cutting board /utensils/your hands after chopping.

a little pinterest love affair

good morning and happy monday all!  i spent a bunch of time on pinterest this weekend and renewed my love affair with it.  so much inspiration to be found! a few of my favorites…

two weeks later

well, here’s the reality my friends.  two weeks after this, we’re living like this. HA! the kitchen is unpacked, our bedroom is livable and our pool is glorious. that’s the good news. the bad news: our furniture is oversized in this house and we want to sell nearly every piece of it. unfortunately, we can’t afford new furniture. so we’re living in this sort of weird in between phase.  

all of the boxes in the dining room are filled with the stuff that used to be on the shelves in the living room. (remember this?)  so i need to unpack them, even though we eventually want to replace those living room shelves with a white built in. because living like this for six months is crazy, right?  don’t tempt me!

pattern and stripes

inevitably when i dream about vacations i dream about vacation style.  this outfit is something i’d wear on a day sightseeing and then to dinner that evening (swap out sandals for the wedges most of the time) and would feel completely comfortable and stylish for both occasions. having outfits that are versatile is so important when you’re trying to pack a bag that won’t break your back!  this dress could later be worn as a tunic with skinny jeans and create an entirely different look. and a striped blazer- that can be worn so many ways!

the travel bug!

happy friday all!  lou and i are in the midst of planning a little european getaway in september. i’ll be shooting a wedding for birds of a feather in ireland and then we’re going to sneak off to either greece or spain for a little beachy getaway.  we haven’t been out of the country since last summer so we’re due for an adventure!  where are your favorite travel destinations? i’d love any and all recommendations!  *photo above from new zealand.  i can’t remember where exactly we were but isn’t it crazy beautiful?!  wishing you a fun and relaxing weekend! xo
