roasted garlic/cauliflower soup with pesto

sometimes when you have a hungry-bordering-on-grumpy husband and nothing but a head of cauliflower in your fridge you’ve got to think fast.  and that’s how this happy accident entered our lives.  the beauty of it is in the simplicity.  just a handful of ingredients, super easy preparation and presto you have a hearty, warm, satisfying meal.  also, another lesson in why one should always, ALWAYS have pesto on hand or in the freezer.  and lastly: i apologize for the similar appearance of this and my last food post.  i guess we’re doing creamy white foods and pesto this week.  more color next week, i promise.  and i’ll be back later today with some links for your weekend.  have a great one!  xx- sarah  {more after the jump}

white bean dip with pesto

this white bean dip with pesto is so quick to whip up and the perfect satisfying snack to get you through until your next meal.  it can also be eaten as you would hummus- spread in a wrap, on veggies, pita and crackers.  if you don’t have pesto already made (see this recipe for how-to pesto) it takes a bit longer, but can also be eaten without the pesto or with harissa! it’s healthy, easy and completely satisfying.  hope you love!  xx- sarah  {more after the jump}

jicama spring rolls

i love ordering spring rolls at restaurants, and when there’s a good peanut sauce i’m completely devoted!  unfortunately i haven’t found a great place to get them here in the desert yet. so, i decided to tackle them myself.  i’m kind of shocked at how easy they are!  as in:  i’ll probably be eating these every day for the rest of my life.  or until i hate them, whichever comes first.  also, i decided to sub out the usual tofu with jicama for a healthier, crunchier roll.  and i am SO glad i did.  obsessed.   i hope you love them as much as i do!  xx- sarah  {more after the jump}

MANGO POPCORN BALLS!

sometime last fall i developed an obsession with popcorn and it’s turned into an every night thing: me and a giant bowl of popcorn watching the real housewives of wherever or some other bravo tv embarassment.  i can resist the popcorn just about as well as i can resist a housewives reunion show.  NOT AT ALL!  EVER!  so these sweet balls (heh) are a natural progression for an over zealous popcorn lover like myself.  and if i had children, these would be my go-to snack to satisfy their sweet tooths without getting them all hopped up on sugar.  hope you love!  xx sarah  {more after the jump}

macaroons, two ways!

my sweet tooth got the best of me this week, two ways!  i had this wild craving for a sweet, chewy macaroon but was also dreaming about jam-y coconut cookies (is that even a thing?).  and chocolate. alas, there would be no settling in this equation, i needed all three.  and so: macaroons two ways!  it took me a couple batches to get the proportions of everything right, to achieve the sweet sticky goodness of the macaroons i remember (without eggs).  but i did it and it was so worth all of the laborious taste-testing (ha!). i also used the leftover chocolate for dipping strawberries.  i may or may not have gained five pounds in the making of this post.  you’re welcome!  xx- sarah  {more after the jump}
