END OF SUMMER SALAD

I often find myself wandering around the produce section adding things to my cart JUST BECAUSE THEY’RE PRETTY.  Does that happen to you?  For instance, this white asparagus and red corn: I’d never tried either, and their counterparts (green asparagus and yellow corn) were right beside them and notably less expensive.  But before I could think twice they were in my cart and on their way into my kitchen!  And truth be told I’m ok with my impulsive grocery shopping habits because I now know that white asparagus has a lighter flavor and texture, which I prefer, and red corn- well, it’s gorgeous and it turns out that’s good enough for me.  Recipe and more after the jump!

As summer is winding down (it’s even starting to cool down a bit here in the desert!) I’m squeezing in as many heaping salads as I can before the craving for warm foods sets in. I’m also loading up on berries, one of my favorite summer treats, and trying to pack in nutrient rich foods to carry my body through the seasonal changes. This salad features arugula microgreens, which have four to six times the amount of nutrients in full grown arugula leaves (source)!  I love them for that, but also for the lightness they bring to the salad.  I’m a fan.  And of course blackberries are loaded with antioxidants and vitamins.  Just one more reason to love those fat, juicy berries!  As if we needed one.  Hope you love!  xx- Sarah

SALTED HONEY AND FIG CHEESECAKE

I did it, I  made another faux cheesecake that I’m so excited about!  Remember this one topped with rhubarb? SO GOOD! This time I mixed up the recipe a bit and topped it with figs, drizzled honey over the top and then generously sprinkled with Maldon salt over every square inch.  HEAVEN. There are no words for how delicious it is.  I promise, I’m not just gratuitously thumping myself on the back here.  It’s mind blowingly good!  That combo of salty and sweet, it’s just insane.  So please, even if you never make another recipe from this blog again, make this.  And share it with your friends, they’ll probably gift you something in thanks. (PRESENTS!) Recipe and more after the jump!  xx- Sarah click to read yo

CARROT NOODLES IN PEANUT SAUCE

If it’s possible to be addicted to noodles, than I nominate myself to be President of Noodleaholics Anonymous. Lately I’ve been noodlizing (yep, made that word up myself) every vegetable I can get my happy little paws on. And carrot noodles have been a fast favorite.  Add a peanut sauce, some fresh lime juice, maybe a little heat with red pepper flakes or Siracha and you have a noodleaholics crack.  No shame in my game, because these kind of noodles are pumped full of vitamins, anti-oxidants and other goodness that punch cancer and heart disease in the face.  100% HEALTHY NOODLES MY FRIENDS!  So have at them.  xx- Sarah {more after the jump}

MANGO, AVOCADO AND BLACK BEAN SALAD

And as promised, I’m back with Jen’s second recipe for today!  Doesn’t this mango, black bean and corn salad look like exactly what you want to eat for lunch?!  Such fresh summer flavor, so satisfying on a hot summer day (of which we have a limited amount left, so get chopping!).  Recipe and a bit from Jen after the jump!  xx- Sarah

From Jen Lauren Grant:

I’m so excited to be guest posting for Sarah while she’s away! I love A House in the Hills and have gotten many of my favorite healthy recipes from here. I can’t quite invent recipes from scratch yet, but years ago my dear friend Melissa gave me this mango, avocado, and black bean salad recipe.  It’s quick, healthy, delicious, and doesn’t even require any cooking!  I hope you enjoy!
