The summer after I graduated high school I worked at a marina in South Portland, Maine as a dockhand.  I’ve always said that nothing beats a good summer in Maine and I still think of it as one of the best jobs I’ve ever had.  I spent the majority of my days in the dock-house overlooking the marina and ocean waiting for a boat to come in or clients to stop by with questions or to buy supplies.  I also ate a fudgsicle every.single.day.  They remind me of a time when I thought I knew everything but actually knew nothing.  They taste like carefree summer days, in the best way.  So here is my {healthier)version- made with only 4 natural ingredients and even more delicious (in my opinion) than the original!  Hope you love! xx- Sarah

Fudgsicles! Fudgsicles! Fudgsicles!

Fudgsicles!  Fudgsicles!  Fudgsicles!

Ingredients

  • 1) 13.5 oz can and 1/2 cup coconut milk
  • 1 ripe avocado
  • 5 tablespoons cacao
  • 5 tablespoons maple syrup
  • popsical molds

Instructions

  • Combine coconut milk, pitted avocado, cacao and maple syrup in a blender.
  • Blend until thick and creamy. Taste and adjust to your preference.
  • Spoon mixture into popsicle molds.
  • Place sticks in fudgsicles leaving approximately 2 inches for the handle.
  • Place in freezer until set and ready to enjoy!

    Oh wow, I haven’t had a fudgsicle in years! These look amazing, though I’m allergic to avocado which is a shame…

      Steph you could add in a little more coconut milk and leave out the avo- just adjust the maple syrup amount to fit. They might be slightly less creamy but I don’t think you’ll mind! :)
