butternut squash soup with curried pepitas

i had this moment in the grocery store the other day where i realized that we’re almost at the end of the very last scraps of winter produce.  and like some crazy squash hoarder i started grabbing at the butternuts.  i’m going to make a couple batches of this soup to freeze because i hate the idea of waiting until october to have butternut squash soup again.  is that crazy?  maybe i’m a kooky squash hoarder or suffering from some other squash related mental disorder.  something to ponder while i’m roasting 55 batches of butternut.  xx- sarah  {more after the jump}

peanut butter chocolate chip granola bars

hi friends!  growing up i was obsessed with nature valley peanut butter granola bars.  you know the ones? peanut buttery, flaky goodness.  so i set out to create a healthy, non-processed version.  and it took me four go-rounds to get a recipe i’m in love with.  but let me tell you, even the practice rounds were all scarfed down in a matter of days.  these are such a perfect snack to get you by until your next meal, i cannot tell you enough how much of a staple they’ve become in our house!  hope you love as much as i do.  xx- sarah {more after the jump}

watercress, jicama and tangelo salad

you may have seen on my instagram this morning that i’m on day 1 of a 3 week ayurvedic spring cleanse. it’s basically a rest for my digestive system and spring cleaning for my insides!  so i may not be posting as many recipes as normal over the course of the next few weeks, or maybe i’ll just be posting some really healthy detoxifying meals.  but i’m happy to say i have a couple of recipe posts lined up already (ahead of the game for once!)  starting with this fresh spring salad. simple, light, delicious and a perfect salad to enjoy during a lunch break outside.  it may not be on my cleanse menu but i do think it’s a great healthy meal to start getting you ready for summer.  hope you love!  xx- sarah     {more after the jump}

easy green curry

my family sent me a care package a while back (yes!) that included spices from a store called “savory spice shop“.  there are quite a few of these shops all over the country and they also offer online ordering.  their spices are to die for.  and one of the spices that came in my gift is the thai green curry.  i have a hard time finding a lot of the traditional thai curry ingredients here in the desert, so i improvised and whipped up this easy and delicious green curry from ingredients that anyone can get their hands on.   and the best part, it comes together so quickly that it’s the perfect weeknight meal for when you don’t feel like doing a ton of work but want a dinner that’s totally satisfying.  hope you enjoy!  xx- sarah  {recipe and more after the jump!}

KALE NOODLE BOWL WITH AVOCADO MISO DRESSING

this is my attempt to sneak some really good nutrition into a noodle bowl.  it takes a bit of effort to cut the kale into ribbons, but you could easily just rough chop it if you weren’t in the mood for slicing and if you did that the dish would come together in the time it takes to cook noodles!  hope you love!  xx- sarah

nori veggie wraps- my everyday staple

this isn’t so much a recipe as a suggestion because it’s so simple.   it’s also something i eat every single day.  i’m a creature of habit and when i find something i love i usually eat it non stop until the day comes when the idea of it turns my stomach.  i expect i’ll be eating one of these a day at least through august.  the perfect light and healthy meal for midday.  and, the secret ingredient gives it just the kick i need to fully satisfy.  {more after the jump, including an animation!}
