HEARTY VEGETABLE SOUP

This is the kind of meal I throw together when I want something to warm me through on a cold winter night, that’s EASY to throw together and so, so satisfying!  The pesto elevates the flavor, but it can definitely be enjoyed without.  And served with a warm piece of sourdough, it’s just perfection!  Winter soups, I love you.  xx- Sarah

STUFFED KABOCHA SQUASH

It’s the season for hearty vegetable dishes AND pomegranates!!  So this weekend when I combined the two I was pretty much the happiest creature alive.  If I were a cat I’d have been purring loud enough for the neighbors to hear!  I won’t go on and on about how tasty and easy this dish is, even though I could.  For days.  Happy Monday friends!  xx- Sarah  {more after the jump}

WARM ROASTED HERBED VEGETABLE AND BEAN SALAD

Let me start this post by saying this:  I could eat this every day of the week.  No joke.  Hearty roasted vegetables, herbs, salt, beans- they can do no wrong.  So please, do yourself and your loved ones a favor and whip this up.  You’ll surprise yourself with how easy and utterly satisfying it is, I promise you.  Do it this weekend. Eat it Sunday afternoon.  Munch on leftovers Sunday evening.  On the crazy off chance there is still some left on Monday morning, scramble it up with some tofu or eggs and add a little hot sauce.  Your mouth deserves it.  Your body does too.  Hellllllooo nutrition.  So just make it, ok?  Enjoy!    xx- Sarah

APPLE OAT CRUMBLE

This dish was born out of the need to have a staple dessert that is always a win that I can throw together in a flash when we’re having guests over.  It’s gluten, dairy and refined sugar free, but I promise you, no one would EVER know.  Breakfast, lunch, dinner, meet my new best friend: Apple Oat Crumble.  She’s versatile, she’s comforting, she’s really really sweet.  And I love her.  xx- Sarah  {more after the jump}

HARISSA ROASTED VEGETABLE BOWL

In the vein of full disclosure I have to tell you this is loosely a recipe, but even more a dinner suggestion.  I’ve been thinking I’d like to share more of my full meals so you can see what day to day eating looks like around here! Often times its as simple as this.  Coconut brown rice, harissa roasted vegetables, sauteed garlic spinach and half an avocado.  If that sounds not-simple to you, click through for my tips on how to prepare and you shall see.  It’s as easy as chopping some veggies, throwing a few things into a rice cooker, sauteeing up some spinach.  I promise, it’s something you could even stand to make after working all day and feeling like you could eat your own arm off (trust me, it was devised under those very circumstances!).  Hope you love!  xx- Sarah
