Soup + Salad From the Grill

Since we’ve been on the road I’ve fallen even more in love with cooking on our grill, simple delicious meals that warm the body.  Especially after long hikes like this one.  Food tastes infinitely more delicious when your legs are achy and your mind has had hours of walking to exhaust all thoughts!  Yesterday we hiked to Alamere Falls, and after a long day of walking this meal was the perfect answer to all of our hunger questions.  Lemony grilled romaine salad (the charred lemons give it such good flavor!), easy tomato soup with salt + pepper potato chips, and a bit of skirt steak- our kind of meal these days!  Recipe for the soup and salad below- we hope you love!!  xx- Sarah  {Styling Sources: plates, bowls, flatware, napkin, ladle, cutting board, serving platter}

Soup + Salad From the Grill

Ingredients

  • 2 heads of romaine lettuce
  • 2 lemons, halved
  • parmesan cheese
  • sea salt
  • fresh cracked pepper
  • (1) 28 oz can of crushed tomatoes
  • 1 close of garlic, minced
  • 1/2 yellow onion, diced
  • 2 tablespoons ghee
  • Salt + Pepper potato chips

Instructions

  • For the salad:
  • Cut approximately 1/2 " off the bottom of romaine leaves
  • Place romaine, and halved lemons on the grill. Cook until lemons are charred, turning lettuce to grill evenly.
  • Remove, place lettuces on serving plates, squeeze charred lemons over top and garnish generously with parmesan cheese, sea salt and fresh cracked black pepper. Serve immediately!
  • For the soup:
  • Combine ghee and diced onion in a small pot. Cook until onion is translucent. Add garlic and cook an additional minute.
  • Add tomatoes and cook for 5-10 minutes, until warmed. Add salt and pepper to taste.
  • Remove from heat, scoop into serving bowls and crush salt + pepper potato chips over top. Serve immediately.

    I’m going to the Adirondacks in NY the 2nd weekend of October! We’re going to be hiking 3 peaks that weekend, and I’m sure we’re going to be tired after. I’m definitely going to try this over the campfire! Looks so delicious and very easy! I’m printing this out to try and get the ingredients together before we go :)
