sometime last fall i developed an obsession with popcorn and it’s turned into an every night thing: me and a giant bowl of popcorn watching the real housewives of wherever or some other bravo tv embarassment.  i can resist the popcorn just about as well as i can resist a housewives reunion show.  NOT AT ALL!  EVER!  so these sweet balls (heh) are a natural progression for an over zealous popcorn lover like myself.  and if i had children, these would be my go-to snack to satisfy their sweet tooths without getting them all hopped up on sugar.  hope you love!  xx sarah  {more after the jump}


1/2 cup popcorn (un-popped)

1/2 tablespoon grape-seed oil

1/2 cup maple syrup

3/4 cup brown rice syrup

1/3 cup finely chopped dried unsweetened mango

4 tablespoons pumpkin seeds

4 tablespoons chopped pecans

4 tablespoons chopped cashews

2 tablespoons chopped almonds

1/4 teaspoon sea salt



– in a large covered pot combine grape-seed oil and popcorn kernels.  heat over medium, shaking pot frequently to prevent kernels from burning  (sweet lou got me one of these for christmas, it makes perfect popcorn!)

– combine popcorn, nuts and mango in a very large mixing bowl

– in a small pan heat maple syrups, brown rice syrup and salt, stirring constantly until it is a thin liquid

– pour syprup mixture over popcorn and thoroughly combine

– place mixture in fridge for 15-20 minutes to harden slightly

– using damp hands form popcorn mixture into large balls the same way you would a snowball- press firmly!

– place balls into an airtight container separated by parchment paper and return to refrigerator to set and store

– enjoy!

(recipe makes 12 large popcorn balls}

    Do you mean grapeseed oil? or, am I missing information about a new oil?!
    This looks wonderful.
    I am a huge, huge fan of popcorn as well.
    I make mine with dried dill, nutritional yeast, siracha, and a pinch of salt. depending on my mood, or what I have on hand, I drizzle olive oil or melt some vegan butter over the top. Perfect. Sour. Delicious.

    When we were kids my Mum used to pop a massive paper bag of popcorn, pour real butter over it and douse it with shaky cheese (parmesan) we'd smuggle it into the movies in her massive purse– with snuck our own drinks too!–it was the poor mans movie snack. We loved it. : )

    i have to have to try this version of popcorn with dill, siracha and nutritional yeast! sounds so good!
    i'm also a huge fan of my popcorn with truffle oil and sea salt. that's probably my favorite, most indulgent way to eat it (i do not use oil or salt sparingly on those days!) 🙂

    it's always way more fun to smuggle snacks into a theater…. you get the satisfaction of winning over THE MAN and eating even tastier treats! must plan a movie date soon.

    these would be a great substitute for a dessert! My roommate loves salty/crunchy things and I am a lover of sweet – we would both be happy munching on these while we (too) watch the next Bravo TV embarrassment 🙂
