ALMOND COCOA TRUFFLES

My sweet tooth was out in full force before we left for Maine, so I whipped up these almond cocoa truffles in an attempt to calm it down!  They’re made with almond butter but you could easily substitute another kind of nut butter, add additional sweetener or otherwise modify the recipe to make sure YOUR sweet tooth is satisfied.  Hope you love!  xx- Sarah  {more after the jump}

 

ALMOND COCOA TRUFFLES

Makes 8

Ingredients: 

1 cup dates

1/3 cup almond butter

1 tablespoon chia seeds

1/8 tsp vanilla

1/3 cup chopped nuts

cocoa powder

 

Method:

– Combine dates, almond butter, chia seeds and vanilla in a food processor and pulse until it forms a large ball

– Form into 8 small balls by rolling mixture between hands

– Spread cocoa powder on a plate and roll balls in powder, then in nuts.

– Refrigerate and serve cold

    Oh man, these are totally on my list of things to make this weekend (even though I just made vegan pumpkin bread and have way too many sweets in my apartment right now)

    I cannot wait to try this! Around holiday times I make truffles but the recipe involves condensed milk and this sounds much better. As a vegetarian, I'm always looking for different things to try. Thank you!!
