PEACH AND PISTACHIO {COCONUT MILK} ICE CREAM

it hit 120 degrees here on saturday.  for those of you operating in celsius that equates to roughly THE TEMPERATURE OF THE SUN.  the one and only thing that will make a girl feel better about living on the sun: peach and pistachio coconut milk ice cream.  yes, it’s a taste of heaven. and so easy to make, no heat involved, cleanup is a breeze, etc.   and i promise you it tastes like ice cream, not some half-assed ice cream wannabe.  actual creamy, sweet, rich, ice cream.  except no cow udders were involved in the production.  brilliant, right!? if it’s hot where you are, make this.  if it’s warm where you are, make this.  if you like eating things that taste like heaven, make this.  until tomorrow, xx- sarah  {more after the jump}

INGREDIENTS:

5 peaches

1 can coconut milk (full fat of course!)

1/3 cup roughly chopped pistachios

7 tablespoons succanat sugar

 

METHOD:

– in a vitamix or similar blender combine 4 peaches (pitted and halved), 1 can of coconut milk, and sugar.

– blend until peaches are liquid

– transfer to a bowl and refrigerate for at least 2 hours

– rough chop remaining peach and pistachios

– add peaches and pistachios to mixture and pour into ice cream mixer (i used this and it works so well!)

– follow instructions on your ice cream maker (i let mine gor for somewhere around 15 minutes)

– serve with chopped pistachios, eat immediately!

– store leftovers in an airtight container in the freezer and let sit for 5- 10 minutes before serving

    Reading the title, I thought it would be a very fancy, complicated recipe and I'm so happy to see how simple it is and how few ingredients it requires. This and the many other homemade ice cream recipes I've seen in blog world over the last few weeks, is definitely motivation enough to get that KitchenAid attachment!

    Also, I have to admit, that although I'm sure 120 degrees is not comfortable at all, as a total summer girl at heart, I'd definitely take a little glimpse of "living on the sun" over the cool summer days we've been having! :P

    YUM, I have to try this soon! I recently inherited an icecream machine but unfortunately it doesn't seem to be fully getting frozen so I've had a lot of trouble making anything with it, but maybe this will change my luck.

    Any chance you could tell me how much coconut milk to use in ounces or cups? Don’t know if coconut milk comes in various sizes as I’ve never used it before.
