CHOCOLATE AVOCADO TARTLETS, AND A THANK YOU

ALMOND COCOA TRUFFLES

My sweet tooth was out in full force before we left for Maine, so I whipped up these almond cocoa truffles in an attempt to calm it down!  They’re made with almond butter but you could easily substitute another kind of nut butter, add additional sweetener or otherwise modify the recipe to make sure YOUR sweet tooth is satisfied.  Hope you love!  xx- Sarah  {more after the jump}

GARLIC LEMON MILLET AND BEET SALAD

I love including grains like millet in a salad because it quickly turns into a very hearty meal that doesn’t leave me wanting for a hunk of bread.  WIN!  And with this particular salad the recipe makes a large serving of garlicky-lemon dressing that the grains soak up.  It’s SO flavorful, if you like garlic and lemon I PROMISE, you’ll love this salad!  Double win if it’s your first introduction to millet, which is a grain I think is underused and underappreciated.  I’m a huge fan.  Hope you love! xx- Sarah  {more after the jump}

SPINACH BLACKBERRY SALAD

WHITE BEAN RATATOUILLE

I know that a lot of the country has been in the midst of a heat spell, but we’ve actually been having rain and thunder storms here in the desert!  It may still be hot, but with the air conditioner up and the rain pounding on our metal roof I was able to convince myself, for just a minute, that fall was upon us.  It was AMAZING!  And in the midst of my deluded fall fantasies I made a big pot of one of my favorite fall comfort foods, ratatouille.  The brilliance of ratatouille lies not only in it’s ability to make you feel like you’ve eaten a really hearty and satisfying meal, but in the insanely easy way it’s prepared.  Essentially it’s no more than stewed vegetables.  Which means, chop, cook and serve.  So at the first hint of fall I recommend you welcome it with a pot of this!  xx-Sarah  {more after the jump}

ZUCCHINI NOODLES WITH PESTO AND ROASTED TOMATOES

My obsession with zucchini noodles continues with this summer favorite!  It’s a flavor explosion featuring two of my summer staples: pesto & roasted cherry tomatoes.  YUM to the max.  There’s nothing better than enjoying a giant bowl of noodles and not feeling like you have to be rolled into bed.  Sorry spaghetti, we’ve broken up for good!  Hope you love as much as I do!  xx- Sarah  {recipe and more after the jump!}
