Is there anything more comforting than a warm cup of apple cider on a chilly day in Fall?  ONLY THE SMELL OF APPLE CIDER COOKING ON THE STOVE!  That’s right.  This drink comes with a bonus- it makes your home smell like it’s been hit with a apple cinnamon-y bomb. A dream!  Seriously, if my house could always smell that lovely I’d be living large.  In fact, should I ever fall into a career as a pop star that will be on my rider- MY DRESSING ROOM MUST SMELL LIKE APPLE CIDER IS BREWING!  I’m very demanding like that, as a pop star.  Which is especially ironic because I’m a terrible singer.  Really, really make-babies-cry and embarrass-my-husband awful.  But all of that aside- you should make this.  It’s heavenly!  xx- Sarah  {this post was produced in collaboration with Sarah Dickenson}

Apple Cider

Prep Time: 15 minutes

Cook Time: 3 hours

Apple Cider

Ingredients

  • 8-10 medium sized apples of your choosing (sweeter variety will produce sweeter cider)
  • 1/2 cup sucanat or other sugar (if you've chosen sweet apples, start with 1/4 cup of sugar and adjust as needed at the end)
  • 4 cinnamon sticks (or 4 tablespoons ground cinnamon)
  • 4 tablespoons allspice
  • lemon wheels
  • cinnamon sugar
  • cheese cloth

Instructions

  • Quarter apples (no need to remove peel, stems, or seeds)
  • In a large stock pot add apples and fill with water, just enough to cover the apples.
  • Wrap cinnamon and allspice in a piece of cheese cloth that is doubled up, tie tightly and add to water.
  • Add sugar to pot.
  • Boil on high, uncovered, for one hour, checking on it frequently and stirring occasionally.
  • Turn down heat and let simmer for two hours, covered.
  • Once it has cooled enough to handle, remove spices and mash up the apples until they are a pulp-like consistency.
  • Pour into a strainer over a large bowl.
  • Place mashed apple into a piece of cheese cloth and squeeze out any extra juice that remains.
  • Garnish with a lemon wheel dipped in cinnamon sugar (optional).
  • Store in air tight container for up to 1 one week or freeze for later use.

    I know I’m a little late to comment on this one, but it’s my first time here for a little while and I was curious what I’d missed. I’m so happy I peaked back, because you can make apple cider?!? I had no idea!! Hot apple cider is one of my favourite things about Fall. I cannot wait to make this! Thank you!
