Peanut Butter Chocolate Chip Flour-less Cookies

What you’re looking at here my friends is breakfast, lunch and dinner.  Some people call them flour-less peanut butter cookies.  That are vegan and if you play your cards right, free of refined sugar.  I consider them a healthy substitute for a balanced meal (kidding!  kind of…).  A friend passed along a recipe recently for a less healthy version of these and I couldn’t wait to modify it make it friendlier to my preferences.  I hoped desperately that I could switch things around and the cookies would still be as great- and, well,  THEY ARE AMAZING!  And they only take a minute to whip up.  You’re going to love them, I promise.  Make them soon!!!!  xx- Sarah

Peanut Butter Chocolate Chip Flour-less Cookies

Yield: approximately 12 cookies

Peanut Butter Chocolate Chip Flour-less Cookies

Ingredients

  • 1 cup freshly ground peanut butter
  • 1 tablespoon ground flax
  • 2/3 cup coconut sugar
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegan chocolate chips

Instructions

  • Preheat oven to 350 degrees
  • Prepare flax egg by combining 1 tablespoon of ground flax with 3 tablespoons warm water. Let sit for at least 5 minutes to set.
  • In a large mixing bowl combine peanut butter, flax egg, coconut sugar, vanilla, baking soda, salt, and chocolate chips. Mix well.
  • Roll cookie dough into 1 1/2 inch balls and place on a silpat lined cookie sheet, 2 inches apart. Lightly press cookie dough to flatten.
  • Bake cookies for 10-12 minutes. Remove from oven, transfer to a wire rack and let cool for at least 7-10 minutes before enjoying!

    AWESOME!! I made something similar last night (and earlier this week but finished the batch, ack!! I didn’t even roll them into balls –they were no bake– and simply ate them via spoon from the container :S )

    I totally consider these breakfast, lunch and dinner (#sorrynotsorry) too!! Great photos (per usual) and nice to see you again in that outfit post below :) Hope your smiles (you and Lou) are returning and life is sort of feeling a bit better. BIG HUG.

    These cookies look delicious! I’ve been loving no-heat cookie recipes lately (it’s too hot turn on the oven or the stove!) and can’t wait to try to make these work without heat!

    These look delish can’t wait to try! Do you think you can sub 1 egg if not vegan? I’ve been looking for a lower sugar PB cookie recipe so thank you for posting! Your photos, recipes, and writing are all so beautifully inspiring!

    Can you take out the flax, or sub it with something such as almond flour? I have all of these things except the flax, and this looks sooooo incredible! :)

      Hi Kate, the flax acts as a binder- so you could sub an egg. Or you wouldn’t have to sub anything if you wanted to eat them as raw cookies! :) xx

    I have made these cookies a few times and they always turn out awesome. But today I changed it up a bit and instead of using peanut butter, I used half a cup of Buckwheat Flour and half a cup of Coconut Butter. They were awesome!!! I will continue to try different versions of this recipe (just subbing out PB for other combos). Thanks for posting this recipe!!
