i’ve never had jetlag before, at least not like i have it this time around. i’ve been walking around since we got home like a dazed puppy dog. it’s made me crave really hearty, healthy meals that require little to no effort. which brings me to this meal…. a bowl of quinoa, black beans, cilantro and avocado with a stack of corn tortillas at the ready and a bottle of cholula to add some kick. so simple to prepare- just heat/mix some (preferably leftover) black beans and quinoa. serve with a sliced avocado half and some cilantro alongside a stack or pre-made tortillas. as with all really simple meals like this- the key to the deliciousness is using high quality, fresh ingredients. i recently started cooking my black beans- it’s really not too much work! (read here about the nutritional punch that black beans pack as well as instructions on how to cook them!) this dish has become my jetlag survival meal. do you have any other recovery tips?

I had it bad after our trip to Bali, and relatively bad after Ireland..Unfortunately I haven't mastered it, so my only tip is "time" 😉
Do you prefer the red quinoa to the plain/white?
really hard to do when i'm so tired/out of whack, but i find working out to help a lot! especially in the AM… i think it probably just makes me more tired and then helps me sleep better, but it works!
@ maggie- i think they are supposed to be the same, but i prefer red.. it has a little more flavor, i think!
@maggie- yup that's the only thing working for me so far too! and i love both red and white quinoa, but the red is usually so much more expensive that i save it for meals where i really want to showcase the flavor.
@rita- i should try it. i've only gone for dog walks- maybe i need to do some hot yoga and tire myself out more! thank you!
We are thinking the same… I just returned from europe totally jet lagged today and also posted tacos with avocados 🙂
The only cure I've figured out is time (and some sleeping pills).
I'm like Jeanine. I don't have a magic remedy. It usually takes me a couple of days so I try to get as much sleep as possible by going to be earlier than I normally would. Totally easy since I'm exhausted anyway. And downing lots and lots of water.
You just combined three of my favorite foods in that dish. Now I must try that out for myself this weekend. Looks yummy!
Drinking cucumber water, and spritzing it on your face. I felt so out of whack…I needed little refreshers helped get my body back in the zone.
I can't stand jet lag – my only solution is sleep! And these tacos look great!

What a great recipe! I added sauted veg – diced onion, diced red pepper, shredded carrot, finely chopped cilantro and minced garlic. Tacos were great, leftovers eaten as a hot or cold salad were also great. Thanks for the idea. 🙂
