Mushrooms are easy! Just let them have a big pan all to themselves. Make sure it’s hot (high), add a little olive oil. Add the mushrooms (dried off, and don’t wash them too rough). They need lots of room–no crowding. Add some salt and pepper. That’s it. If you want to get fancy, you can add some Marsala or white wine at the end. Put them on top of pasta with fresh parmesean, or on burgers, or toast… You could turn the heat down and add scrambled eggs towards the end.
