BANANA ALMOND PANCAKES WITH PEAR RASPBERRY COMPOTE
Right before this picture was taken there was a {very romantic} conversation taking place between me and that stack of pancakes. I was asking them, in effect, if they would spend their life with me. Yes, that's right, I proposed to a stack of pancakes. They're vegan, have no sugar, no gluten, are so quick to throw together it's ridiculous and so yes, I want to marry them. You will too, I promise. My darling friend Farra made them for me at Poet's Loft and I very nearly proposed to her too. So beware, this recipe may result in an engagement. Don't say I didn't warn you!!!! {recipe and more after the jump!}
Banana Almond Pancakes
adapted slightly from this recipe
2 cups almond meal
3 firm bananas
2 tablespoons flax
6 tablespoons warm water
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 tablespoon cinnamon
pinch of sea salt
2 cups frozen raspberries
2 firm pears
1/2 lemon, juiced
coconut oil for cooking
choppped pecans for garnish
Method:
- Prepare flax "eggs" by combine ground flax with water. Place in refridgerator for 15- 3 minutes to set.
- In a medium, heavy bottomed sauce pan combine raspberries, diced pear and lemon juice. Cook over medium/low heat until pears are softened.
- While fruit is stewing...Mash bananas and combine with almond meal (I tried making it with fresh ground almond meal- it was disastrous. Use store bought almond meal!)
- Add baking soda, nutmeg, cinnamon and combine thoroughly.
- Add flax eggs and mix well.
- Scoop 1 1/2 tablespoons of pancake mixture into a well oiled frying pan and cook over medium low heat for 2-3 minutes (shape your pancke with a spoon if needed to get the shape you'd like! It's very agreeable batter.)
- Flip and cook the other side for 1-2 minutes, or until it's lightly browned.
- Serve in a stack with tons of the raspberry pear compote and some chopped pecans. Or go nuts and add some of this coconut whipped cream too, I dare you!

Pancakes are quite possibly my favourite food! The compote topping sounds just wonderful and coconut cream would definitely be a fantastic addition :)
I once read that pancakes are the 'black hole meal of breakfast', and it's stuck with me ever since (years!)--so whenever I eat them (rare), I either feel ridiculously guilty, or I've modified them to be better (hello quinoa pancakes... once, because then my bf found out there was quinoa in them and he REFUSED to take another bite--of a meal he'd been so deliciously enjoying up until that moment).

These look amazing, AH-MAZE-ing. And, I like the note about buying the almond meal because I totally, like you, would have just tried to ground up some on my own. So that's helpful.
