MAPLE GRANOLA
one of the questions i get most the asked when people are inquiring about what i eat is "WHAT DO YOU HAVE FOR BREAKFAST?! i think that because so many of the breakfast foods we eat in this country are dairy/meat/egg centric that sometimes the idea of a breakfast without those things is mind boggling. but let me tell you, i am a breakfast lover and will not suffer just because i don't eat the foods that we traditionally call breakfast. no ma'am. so, let me introduce you to my friend maple granola. sweet, crunchy, filling. add almond milk and piles of fresh berries and what you have, my friends, is a little bowl of heaven. eggs who? xx- sarah {more after the jump}
INGREDIENTS:
3 cups oats *choose gluten free if you'd like!
1/4 cup coconut oil
1/ 2 cup chopped walnuts
1/3 cup chopped almonds
5 tablespoons maple syrup
1 tablespoon raw honey
1/4 teaspoon sea salt
1/4 teaspoon vanilla
METHOD:
- preheat oven to 300 degrees
- combine oats, almonds, walnuts in a large mixing bowl
- if coconut oil is solid, heat in a pan with maple syrup and honey until liquid, otherwise mix maple syrup, honey, vanilla and sea salt
- add maple syrup mixture to oats and stir thoroughly
- spread oats on a silpat or parchment lined baking sheet and bake for 20-30 minutes, or until light golden brown
- remove granola from stove and let cool (it will become crunchy as it cools)
- you can sub any nuts you'd prefer and/or add chopped dried fruit to the cooked granola
- serve as is for a snack or add almond milk and fresh fruit for a delicious breakfast!

I've been wanting to make granola - thank you! Question: In the instructions you talk about honey, but I don't see it in the ingredient list; how much honey should we add (if any)?

Yay! Granola is one of my favorite breakfast foods... it's a great change from the heavy egg/sausage type thing, you know? Plus, you always feel great after eating it! :)
Yum! Looks so good, I eat granola with greek yogurt and fruit every morning for breakfast!
