STRAWBERRY COCONUT POPSICLES

i live for frozen treats in the summer- popsicles, ice cream, smoothies, frozen grapes, i just can't get enough!  as i recently mentioned i just picked up these rad popsicle molds and now i'm on what could be considered a popsicle bender.  (who even knew that was a thing?!)  my first batch was coconut milk, banana and honey.  SO GOOD!  then i moved onto another staple- strawberry.  also delicious.  and did i mention these are healthy? yeah, the time is now and popsicles are your new best friend.  at least until my new ice cream maker gets some action, and then we may be having another conversation entirely.  if you have any suggestions for popsicles i must try, you know where to leave them!  xx- sarah  {more after the jump}

 

INGREDIENTS:

1 can of coconut milk

13 medium/large strawberries, de-stemmed

2 tablespoons honey

1 pinch of sea salt

 

METHOD:

- in a blender thoroughly blend the coconut milk, honey, sea salt and 9 strawberries

- add in the last strawberries and pulse to blend just until large chunks are gone

- pour into molds and freeze

- to remove from molds, hold under cool water for a few seconds, then lightly twist 

- enjoy!

(this makes a little more than can fit in the molds, i added ice to the extra and blended it for a smoothie treat!)

Guuurl ... Hahahaha - For a second there I thought you were headed in a totally different and how should I say? More "personal" direction? I had to scroll down and get the WHOLE picture. Those are definitely some interesting looking popsicle molds ;)

Hi Sarah, what a yummi treat, even for a winter ( I live in Brazil, here we are heading to a winter)...
