white bean dip with pesto
this white bean dip with pesto is so quick to whip up and the perfect satisfying snack to get you through until your next meal. it can also be eaten as you would hummus- spread in a wrap, on veggies, pita and crackers. if you don't have pesto already made (see this recipe for how-to pesto) it takes a bit longer, but can also be eaten without the pesto or with harissa! it's healthy, easy and completely satisfying. hope you love! xx- sarah {more after the jump}
INGREDIENTS:
2 cups cooked white beans (i used navy beans)
2 medium cloves of garlic
1/4 teaspoon sea salt
1 large lemon
olive oil
pesto to garnish
METHOD:
- place garlic in a food processor and pulse until chopped
- add white beans, sea salt, juice of 1/2 lemon and blend until creamy
- add more salt/lemon juice to taste
- scoop into serving bowl and garnish with pesto and olive oil
- serve with crackers, veggies, pita, or a baguette. enjoy!

Dips are my life right now. It's such a super easy healthy lunch, and a dollop of hummus or bean dip is such an easy way to add some flavour and interest to an otherwise samey dinner. Thanks for the inspiration.

Yumm! I absolutely love white bean dip, more than hummus even. I find the white beans to be so much more smooth than chick peas. I've never tried it with the pesto, so I'll have to give this a try asap!
