Happy Friday everyone!  I’m so excited to share today’s post, I think you’re going to looovvve it!  First and foremost- Spring is upon us, summer is right around the corner, and that means strawberry mojitos are on my mind!  I’ve got a recipe for you after the jump- sweet, minty, refreshing goodness that promises to make you happy.  And, for the extra exciting part- West Elm is giving one lucky reader all the barware fixins for an outdoor cocktail party!  Included in the giveaway are the quilted acrylic glassware  ((8) small tumblers, (8) large tumblers (8) wine glasses), copper bar tools (strainer, bottle opener, jigger), copper pitcher and (8) metal bendy straws- all pictured above.  FUN, right?!

STRAWBERRY MOJITOS

STRAWBERRY MOJITOS

Ingredients

  • 3 cups of strawberries, stems removed
  • 1 1/2 cups sugar
  • white rum
  • tonic water
  • mint
  • limes
  • ice
  • water

Instructions

  • To make the strawberry simple syrup combine strawberries, 1 1/2 cups of water and 1 1/2 cups of sugar in a heavy bottomed pot. Bring water to a boil, stirring constantly to dissolve the sugar. Reduce heat and simmer for 7-10 minutes, until it has thickened a bit and turned a deep pink color. Strain the liquid through a fine mesh strainer, removing strawberries. Set aside to cool.
  • For one mojito: In a drink shaker combine 2 oz of rum, 8 large mint leaves (torn), 1 lime wedge-squeezed, 1 oz of strawberry simple syrup, and fill halfway with ice. Shake vigorously and pour into serving glass. Fill to top with tonic water and garnish with a strawberry and lime wedge.

Notes

For these photos I added extra simple syrup to get the bright pink color! When made per the recipe, they're a beautiful light pink. If you prefer them the bright pink shown, decrease the amount of sugar in the simple syrup to 1/4 cup. It won't thicken as much as a traditional simple syrup but it will be sweet enough to flavor the cocktails and give them the bright coloring! Adjust the simple syrup amount in the cocktail to your taste preference.

    It’s so hard to choose!! My boyfriend and I just purchased our very first place together, a townhouse! It needs quite a bit of TLC so we won’t be able to really make it feel like home for a bit. I LOVE nothing more than being able to sit out on the back porch in the morning and drink my morning coffee (while snuggled up to my beau). I choose the Jardine Double Lounger so we could make every morning perfect (sooner rather than later)!!

    We don’t have any private outdoor space right now (womp womp) but that hasn’t stopped me from bringing the outdoors in. Would love to add the pierced porcelain hurricanes to my coffee table vignette, or the black fiberstone round planter — so chic!

    I’ve always been one who loves the idea of taking the indoors outside and the Tillary Outdoor Sofa would be a perfect example of this. Inside comfort but with the surroundings of the outdoors. Being able to sit back, enjoy a cocktail and the sunshine (or sunset) is my idea of true relaxation (okay fine, with my Instagram and Facebook updates close to my side).

    Love how you styled your new bar (it’s beautiful!). The photos, per usual, are stunning and so visually appealing. I’m a big mojito fan and these look nothing short of scrumptious!

    At the top of my wishlist is a new fence for my patio and a good power washing for the rest of it. Then I can once again enjoy some outdoor living. I’d love to add some great outdoor furniture like the Tillary Outdoor Modular Seating.
