CUCUMBER MINT SLUSHIE

it’s been a scorcher of a summer and i know you folks on the east coast have been suffering.  so i thought, what would be the coolest possible thing, aside from ice cream/popsicles, to feed these folks?!  and i came up with this: cucumber, mint, blended with lots of ice, some sweetness, and a bit of lime juice.  SO REFRESHING YOU’LL FORGET YOU HAVE A SWEAT MUSTACHE THAT’D GIVE RON SWANSON A RUN FOR HIS MONEY!!!!  and i’m not saying you should, but a bit light rum certainly wouldn’t ruin this party! xx- sarah {more after the jump}

INGREDIENTS:

1 medium cucumber

2 cups ice

1/2 cup water

4 large mint leaves

1 lime

2+ tablespoons honey, agave or other sweetener

water

sugar and lime to garnish (optional)

 

METHOD:

– to make the optional lime sugar garnish, zest one lime (green peel only) and mix with sugar on a plate

– peel cucumber, rinse mint leaves and add to blender with ice and juice from one lime.

– add water to achieve a consistency you’re pleased with and blend until slushed

– to garnish, wet the rim of glass and dip in lime zest sugar

– serve immediately!
